Forgotten Vegetable

Runner beans are often seen as ornamental plants, but they are vegetables and legumes. The bean is known by the name “Roomsche Boonkes,” and its Latin name is Phaseolus coccineus. The beans are also sometimes referred to as “scheiers.” Runner beans are also known as a forgotten vegetable. You may not find this vegetable in every supermarket, but you might come across the beans at a local market or in a health food store.

Runner beans can be effectively frozen. Trim the beans and remove any strings if present. Then, slice them into small pieces, blanch them, let them cool, and freeze them.
